There are five main methods for mixing cocktails. Shaking involves shaking a shaker back and forth to mix the drink, chill it, incorporate air, and melt a moderate amount of ice to complete the drink. Floating involves carefully drizzling the drink onto the very top using the back or grip of a bar spoon. “stirring,” which involves using a long bar spoon to stir the drink with ice in a mixing glass; “building,” where the drink is prepared directly in the serving glass and mixed using the force of bubbles created when carbonated ingredients are poured; and “blending,” where the drink is blended with ice in an electric blender, resulting in a texture that varies depending on the blending time. While individual bartenders may have their own unique mixing techniques, these five methods are generally used.

The “occasion” refers to factors such as the season, who you’re drinking with, and whether it’s before, during, or after a meal. In the hot summer, a cold draft beer is ideal, while in the cold winter, warm sake is the perfect choice.
The temperature of the drink should also vary depending on the situation. Generally, drinks are served colder in summer than in winter. The type of drink chosen also depends on the nature of the gathering—whether it’s a business meeting, a date, or a casual get-together with friends filled with laughter and conversation. Furthermore, the choice of drink should differ based on whether a meal is being served. Generally, people tend to prefer dry or bitter varieties before a meal and sweet drinks after a meal.
The temperature of the drink is also important. Even with wine, the optimal serving temperature differs depending on whether it is white or red; and even among white wines, generally speaking, the more aromatic and premium the wine, the higher the temperature at which it should be served. This is because if the temperature is too low, the rich aroma is easily lost. The ideal temperature also varies depending on the main components of the drink.
The importance of the glass cannot be overlooked. Tulip-shaped glasses are suitable for drinks with exceptional aromas, while small, clear glasses are ideal for drinks that are light and smooth—those best enjoyed chilled—even if their aroma and flavor aren’t particularly strong. The type of glass used is a major factor in determining the taste of the drink, as the influence of aroma on flavor is significant and cannot be ignored.

In addition, “maraschino cherries” are used; typically, cherries with stems are added directly to the cocktail, while those without stems are skewered on a cocktail pick. Olives with the pits removed and replaced with a piece of bell pepper are also used, or pickling small onions in a mixture of salt and vinegar to use as a garnish for dry cocktails. Occasionally, coffee beans are used, and in such cases, an odd number of beans is used for the garnish. This method is said to follow a traditional Italian custom of welcoming guests.
